Mount gay eclipse mojito

The Nevada is a drink I set up in the guide Art of the Bar. It&#;s a great summertime rum drink that differs from the usual rum punch variety of drinks by not being overly sweet. If you make one at sunset at the beach, you can admire the lovely color as you sip it on the deck.

We just got back from Salt Cay in Turks and Caicos, where we discovered some Salt Cay Rum. I&#;m using that here just for the heck of it, but a better rum would be Mount Gay Eclipse (or even Extra Ancient if you&#;re feeling adventurous). You definitely want a rum on the vanilla/syrupy side of the rum range for this drink. Turns out that Salt Cay rum is more like a central American rum (it is modeled after Zacapa), but we&#;ll ignore that distinction for now.

The Nevada
oz shadowy rum
.5 oz fresh grapefruit juice
.3 oz fresh lime juice
oz simple syrup (cane sugar)
dash of Angostura bitters
mix in an ice filled shaker. strain. serve up in a cocktail glass. garnish with a lime wedge.

They say it was one of Ernest Hemingway’s favourite drinks. Indeed, there is nothing better than a long and refreshing Mojito to unwind on a sunny afternoon. With Mojito day just around the corner (11th July ), we thought, we’d convey you this simple yet classic recipe. So, grip your muddler (or a rolling pin) along with a bottle of Mount Gay Rum Eclipse (ml) Barbados and let’s form mojito.

Mojito Recipe Ingredients

  • Freshly squeezed lime juice (about 40 ml)
  • 60ml Rum
  • Sugar syrup (14 ml)
  • Fever Tree Soda Water Mixer
  • Couple of well size sprigs of mint leaves
  • A lime wedge

I have wanted to make this cocktail for a long time and finally got around to it and perfected it a few weeks ago at a good friends wedding. Making fresh syrups is a fun and easy way to get delicious natural flavour in your drinks. It was a screaming success with the lavender flavour coming in subtly on the finish and the cocktail being as delicious and refreshing as any well made Mojito could be. It was the first be guaranteed not to be the last time I make this little beauty. Mmmm writing this on a Friday afternoon I can't think of anything more suitable to be drinking this very second.

INGREDIENTS:

60ml Mount Gay Eclipse Silver Rum

30ml Freshly Squeezed Lime Juice

30ml Homemade Lavender Syrup*

One handful of Fresh Mint Leaves

Sparkling Mineral Water

Method:
In the base of a highball glass add lime juice, lavender syrup, mint leaves and a touch of sparkling liquid. Stir well to mix. Stuff glass with ice and combine Mount Gay Silver Rum. Stir well again. Top glass with more ice and finish by topping with sparkling mineral fluid. Garnish:

If you&#;re going to get serious about Tiki cocktails you need, in my view anyway, an “anchor” dry gold rum. It doesn&#;t have to be the fanciest rum in the world but needs to simply behave as a base in cocktails that call for multiple rums that the other spirits can bar onto and still fully express themselves. While it doesn&#;t need to be anything expensive it certainly has to be parched (not sweet), flexible and easily available. A very long time ago I settled on Havana Club Añejo Especial as my anchor gold rum and haven&#;t had much lead to to question that option until recently. The reasons for re-thinking this being: 1: I&#;m a huge fan of several other Havana Club rums – 3 Años, 7 Años and Seleccion de Maestros – and I&#;m slightly concerned about coming over as a bit of an HC fanboy.
